Vegetarian Breakfast #4 - Huevos Rancheros
I’ve seen huevos rancheros made in a number of ways, but my daddy taught me this one.

You will need:
- 2 eggs
- 2 slices of tofurkey
- salsa (either home made or store bought, I used Tostitos brand from the jar, a few spoonfuls)
- butter/margaine (whatever you prefer to cook your eggs in)
- cheese (I used shredded mexican 4 cheese blend from Sargento, but feel free to use what you like)
- seasonings (again, your choice. I sprinkled chili powder, onion powder, and garlic powder liberally)

1. Heat butter until it’s nice and melted and covers the whole pan.
2. Throw 2 slices of Tofurkey (or whatever veggie deli slices you enjoy) along with a couple spoonfuls of salsa and allow to cook on low heat for a few minutes
3. Crack two eggs over the slices.
4. Sprinkle seasoning and then cheese over everything.
5. Cover and cook on medium heat for a couple minutes and then set to low until eggs are set (less time if you enjoy them runny, more time if you like them fully cooked).
6. Serve with whatever you like (I’d recommend some Haas avocado, maybe sour cream, or black beans with tortillas or toast).

Seriously good stuff. The deli slices really add to it. Yum yum yum, enjoy!

3 (15 ounce) cans of Bush’s Vegetarian Baked Beans
1 package of Yves veggie dogs, cut into half moons
1/4 cup bbq sauce
2 tablespoons brown sugar
2 tablespoons pure maple syrup
2 tablespoons yellow mustard
2 tablespoons Earth Balance
Preheat oven to 350 degrees. Melt Earth Balance in a skillet over medium high heat and brown the veggie dogs. (This step is purely optional, it’s just my opinion that everything tastes better if you sautee it in earth balance first.) Meanwhile mix remaining ingredients together in a large bowl, then stir in veggie dogs. Pour it all in a greased casserole dish, cover and bake for 20-25 minutes.

#3 - The Bagel Sammich!

When you’re feeling a little lazy or you need breakfast on the go, the Bagel Sandwich is usually my favorite way to go. Toast the bagel (this time it was some run of the mill Lender’s bagels from the store, but if you can get yourself some NY Style bagels from a good deli, much better!), spread some cream cheese (get quality stuff. No point in being cheap with cream cheese), add some sliced tomato and lettuce (and red onion if you got ‘em!) and bam! You can also add some veggie bacon like Smart Life or Morningstar for extra crunch. So, so good!

Awesome, super tasty sandwich! Add some OJ to your b-fast and you’re good to go.
